White Wine Butter Sauce
Yield, 1 3/4 cups


Ingredients:
3 tbsp sweet yellow onion, minced
1 tbsp fresh thyme, chopped
1 1/2 cups dry white wine
1lb unsalted butter, cut into cubes


Combine onions, thyme and wine in a sauce pan over med high heat to a slow boil and reduce until liquid has reduced to about 1/4 cup. Reduce heat to med low add the butter each cube at a time and slowly whisk them in until they are melted and sauce is slightly thick. Season with salt and pepper to taste.

This sauce is wonderful served over pasta with fish or seafood, grilled or roasted chicken and over poached eggs.
