Marionberry Jam and Red Onion Crostini
Yield, 6 servings


Ingredients:
2 medium red onions, sliced
1 clove garlic, minced
3 tbsp balsamic vinegar
1/4 cup Van Till Family Farm and Winery Marionberry Jam
2 tbsp Fresh Italian Parsley, chopped
6 slices toasted baguette



Heat a medium sauté pan over high heat and add onions. Cook onions stirring frequently until they have become slightly caramelized. Add garlic and stir for 2 min, then add balsamic vinegar and reduce for 4 min. Stir in marionberry jam until it melts into onions and creates a thick sauce, season with salt and pepper to taste. Top toasted baguettes with warm jam mixture and garnish with Italian parsley.
